Almond Crusted Lemon Tilapia


  • 4 tilapia fillets
  • 1 cup almond meal
  • Zest of 2 lemons
  • Salt and pepper to taste
  • 2 eggs, beaten
  • 2 tablespoons olive oil


  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a shallow dish, combine almond meal, lemon zest, salt, and pepper.
  3. Dip each tilapia fillet in beaten eggs, then coat with the almond mixture.
  4. Heat olive oil in a skillet over medium heat. Cook fillets until golden brown, 2-3 minutes per side.
