Autumn Harvest Quinoa Salad


  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 cup diced butternut squash
  • 1 cup chopped kale
  • ½ cup dried cranberries
  • ¼ cup chopped pecans
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste


  1. Rinse quinoa thoroughly and cook in vegetable broth according to package instructions.
  2. While quinoa cooks, roast butternut squash in the oven until tender.
  3. In a large bowl, combine cooked quinoa, roasted squash, chopped kale, cranberries, and pecans.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper for the dressing.
  5. Pour the dressing over the salad and toss gently to combine.
