Basil Pesto Spaghetti Squash


  • 1 medium-sized spaghetti squash
  • 2 cups fresh basil leaves
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup pine nuts
  • 2 cloves garlic
  • 1/2 cup extra-virgin olive oil
  • Salt and pepper to taste


  1. Preheat oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and remove seeds.
  3. Roast squash in the oven for 40 minutes or until tender.
  4. While squash is roasting, combine basil, Parmesan, pine nuts, and garlic in a food processor.
