Ingredients

  • 1 large spaghetti squash
  • 1 lb ground turkey
  • 1 bell pepper, diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 2 tbsp Cajun seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut spaghetti squash in half lengthwise and scoop out seeds.
  3. In a large skillet, cook ground turkey until browned. Add bell pepper, onion, and garlic; cook until vegetables are tender.
  4. Stir in diced tomatoes and Cajun seasoning. Season with salt and pepper to taste.
  5. Fill each spaghetti squash half with the turkey mixture. Top with shredded cheese.
  6. Bake for 25-30 minutes or until squash is tender and cheese is melted and bubbly.
