Ingredients

Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Set them aside.
- In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until quinoa is cooked and liquid is absorbed.
- In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, Kalamata olives, olive oil, lemon juice, garlic, dried oregano, salt, and pepper. Mix well.
- Stuff each bell pepper with the quinoa mixture and place them in a baking dish. Cover with aluminum foil.
